Easy No Bake Strawberry Key Lime Mini Pies

Pie is one of my all time favorite desserts. Cream pies are the best of all. I have a super easy pie recipe for you and my friends who don't cook or bake. It requires simply layering a few ingredients and the results are so so delicious. These little mini key lime pies will become a family favorite. They are perfect for a wedding shower, birthday luncheon with friends or any occasion really! You only need 4 ingredients and there is no stirring, mixing or baking required. Kids will love to help you make these pies and the clean up is a breeze.

Gather your supplies. Have you seen those cute mini graham cracker crusts from Keebler®? They are in the baking supplies lane. Get a 4 pack of Oikos® Key Lime Greek Yogurt and a can of original Reddi-wip® whipped cream both in the dairy lane. They add a pint of fresh strawberries and a lime to your cart. I got all these items at my local Walmart.

Easy Mini Key Lime Pies

  • Keebler® Ready Crust® Mini Graham Cracker Pie Crust-6 pack
  • 4 Pack of Oikos® Key Lime Greek Yogurt
  • Reddi-wip® original 13 oz
  • 1 pint of fresh strawberries
  • 1 lime



In each pie crust add a swirl of Reddi-wip® whipped cream then fill the rest of the pie crust with the Oikos® Key Lime Greek Yogurt.


Slice strawberries and layer on top of pie.


Add another dollop of Reddi-wip® on top of the strawberries. Garnish with a thin slice of lime

Fresh Grilled Pineapple & Strawberries with Maple Syrup * Food & Drink



This delicious recipe is naturally gluten free. It's perfect for everyone at your next BBQ. My mom loves grilled pineapple. I love the way the grill brings out the sweetness of the fruit and caramelizes the fruit sugars while still keeping a little bit of the tanginess. Serving grilled fruit kabobs for dessert while dining Al fresco is perfect. Drizzle some real pure Vermont maple syrup over the top and it's heaven. Great for a light dessert. For a warm summer evening another way to serve the fresh grilled pineapple and strawberries is to serve it over a vanilla bean ice cream then drizzle the maple syrup over the top for a fresh grilled fruit ice cream sundae. YUM

P.S.
I use Butternut Mountain Farm pure Vermont Maple Syrup because my sister's sugar bush in northern Vermont contributes to their maple syrups. I know many of the maple producers in the area that contribute Butternut Mountain Farm and have visited Butternut Mountain in Johnson, VT. I know I am getting the best quality maple syrup from them. Their syrup comes from some of the most pristine mountains filled with wild beautiful sugar maple trees. I've walked the mountains. My kids have helped tap the trees where this syrup comes from and have helped stoke the fire on a chilly March evening in the wood fired evaporator. 

How to Grill Pineapple and Strawberries
  • 1 fresh ripe pineapple
  • 1 pint of fresh strawberries
  • 1 pint of real Vermont maple syrup- I use Butternut Mountain Farms grade A dark robust
Cut pineapple into large bite size chunks. Remove stems from strawberries. Alternate strawberries and pineapple on skewers. This gives a nice contrast for presentation. 



Allow fruit to grill for about 5 minutes on each side on a medium high heat. You want the outside to caramelize a bit without over cooking inside too much.

Place on serving tray and drizzle with maple syrup (note not the pancake syrup that is make of corn syrup get the real stuff).
For a grilled pineapple and strawberry sundae serve warm fruit over vanilla ice cream then drizzle with real vermont maple syrup.

How to Make Fresh Strawberry Milk Recipes * Food & Drink

My kids love strawberry milk. We have used the powder strawberry milk mix before but this time I wanted to come up a with recipe that is more natural and healthy with less sugar. There are so many juice recipes for a nice healthy drink, but not really anything with milk. I came up with a simple delicious Strawberry milk recipe. Since fresh strawberries are in season right now it's a great treat for the family. It's almost like a fresh fruit smoothie. An extra bonus is this recipe is a lactose free strawberry milk recipe.


Fresh Strawberry Milk

  • 1 pint of fresh strawberries
  • 1/4 cup raw organic blue agave syrup
  • 1 quart ultra-filtered fairlife whole milk
Makes about 2 cups of fresh strawberry milk syrup.


Wash and slice fresh raw strawberries. In a blender add strawberries and agave syrup then blend on puree setting. Pour milk into a glass leaving enough room for strawberry puree. Add puree, then stir. It's so simple you won't believe you could have been making this yummy drink all along.

Sourdough French Toast with Berries and Creme Fraiche * Food & Drink





Every Valentine's Day I make a special Valentine breakfast for my family. When my kids were very little it was fresh pancakes with berries and whipped cream. When they got a little older it was big thick waffles because I got the best waffle maker that made heart shaped waffles. Now that they are all teens their favorite warm breakfast is french toast. This french toast is extra special. It's topped with fresh red berry sauce and the very best madagascar vanilla creme fraiche from Vermont Creamery.

I promise promise promise this is the way breakfast should taste.



Red Berry Sourdough French Toast
makes 4 servings

  • 1 loaf of sourdough french bread sliced
  • 4 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon 
  • dash of sea salt
  • 1/4 cup fresh creamery butter
  • 1 pint of fresh strawberries
  • 1 pint of fresh raspberries
  • powdered sugar for dusting
  • coconut oil 


Slice strawberries. In a medium sized bowl add raspberries, strawberry slices and sugar. Smash berries together with sugar. Let sit while preparing french toast.
In a medium bowl add eggs, milk, vanilla, cinnamon and salt. Whisk together. In a large frying pan coconut
 oil on medium heat. Dip bread into egg mixture then place in frying pan. Cook until golden brown on each side. To work fresh creamery butter.




Using a heart shaped cookie cutter cut out center of each piece of french toast. Lay french toast on plate and fill heart with berry sauce. Top each piece with a spoon of creme fraiche. Dust with powdered sugar and garnish with whole berries.

Chocolate Brownie Waffles with Strawberry Sauce * Food & Drink



How about some breakfast for dessert. Use some brownie batter scooped with an ice cream scoop, add it to your waffle iron, cook and top off with some fresh spring strawberries. It's a perfect balance of rich chocolate and fresh berries. A chocolate lovers dream dessert.


Chocolate Brownie Batter Waffles
makes 6-8 waffles

  • 1 cup cold press pure coconut oil
  • 1 cup cocoa powder
  • 2  cups of granulated sugar
  • 4 eggs
  • 1 1/2 teaspoon of pure vanilla extract
  • 1/2 teaspoon sea salt
  • 1 cup of all purpose unbleached flour
In a small glass bowl melt coconut oil for 15 seconds. In a large bowl mix sugar, cocoa powder and salt. Add eggs, vanilla, coconut oil and mix together by hand. Slowly mix in flour. Batter will be thick. Using an ice cream scoop, scoop a large rounded scoop of batter onto center of hot waffle iron. Cook until waffle iron chimes. 

Loosen edges of brownie and lift from waffle iron using a pie server or spatula. Allow to cool on cooling rack.



Strawberry Sauce

  • 4 cups of sliced fresh strawberries
  • 2 cups of granulated sugar
In a medium mixing bowl mix together sliced strawberries and sugar. Allow to sit while brownies are cooking. The sugar will draw juices from the strawberries. Mix once more then drizzle over brownies to serve.
