How about some breakfast for dessert. Use some brownie batter scooped with an ice cream scoop, add it to your waffle iron, cook and top off with some fresh spring strawberries. It's a perfect balance of rich chocolate and fresh berries. A chocolate lovers dream dessert.
Chocolate Brownie Batter Waffles
makes 6-8 waffles
- 1 cup cold press pure coconut oil
- 1 cup cocoa powder
- 2 cups of granulated sugar
- 4 eggs
- 1 1/2 teaspoon of pure vanilla extract
- 1/2 teaspoon sea salt
- 1 cup of all purpose unbleached flour
In a small glass bowl melt coconut oil for 15 seconds. In a large bowl mix sugar, cocoa powder and salt. Add eggs, vanilla, coconut oil and mix together by hand. Slowly mix in flour. Batter will be thick. Using an ice cream scoop, scoop a large rounded scoop of batter onto center of hot waffle iron. Cook until waffle iron chimes.
Loosen edges of brownie and lift from waffle iron using a pie server or spatula. Allow to cool on cooling rack.
Strawberry Sauce
- 4 cups of sliced fresh strawberries
- 2 cups of granulated sugar
In a medium mixing bowl mix together sliced strawberries and sugar. Allow to sit while brownies are cooking. The sugar will draw juices from the strawberries. Mix once more then drizzle over brownies to serve.
