Celebrating Winter * Recipes - Crafts - Travel - Fun


Wintertime is for us is filled with lots of snow, warm treats and soups, snowy inspired crafts and home decor. We love to cozy up by a blazing fire with a nice cup of hot cocoa to read a book or to watch one of our favorite movies or TV shows on Netflix.


After a day out in the now sledding or building a snowman some fresh hot benneigns are the perfect treat. Here is my recipe for Mini Beignets ( French doughnuts).


If need something a little more substantial my mom's recipe for White Chicken Chili is soooo good!


Are you thinking about visiting the love snowy Rocky Mountains?  We loved our visit to the Montage at Deer Valley, Utah with ski in ski out access, delicious complementary s'more around the fire pit and soaking in the hot tub under the falling snow.

First Day of Fall * Autumnal Equinox



It's the first day of fall. How do you celebrate and decorate for the changing of the season? Here are some of my favorite fall traditions my kids and I have gathered throughout the years. As the cooler weather sets in warm flavors and colors set the scene. I hope you enjoy these as much as we do.



My very first blog post ever was for this Microwave Caramel Apple Recipe. That was 9 years ago! We make these Caramel Apples every year without fail. I wrap up the extra caramel into bite sized caramels to eat later.


My mom has a split tree. It's half red delicious and half golden delicious apples. These Turtle Caramel Apple Nachos are a great recipe to use a mix of fall apples.


My delicious Harvest Apple Pie is a mix of a crust topped and crumble topped pie. I need to make some of this pie today to celebrate the first day of fall and  a big basket of freshly picked apples. I have the no fail easiest Pie Crust Recipe too!



One of my all time favorite crafts for kids in the fall is making these simple Fall Leaf Wreaths from found items you already have on hand. It's a great time to explore outside with your kids in the cool fall air.


Painting some pumpkins to decorate the house is a great kids activity. Everyone will love to join in crafting. I used puff paint to make these Gilded and Faux Studded Pumpkins. 


With the weather getting cooler cozy up with a bowl of my mom's White Chicken Chili. This recipe is a family favorite. It can be make on the stove top or in a slowcooker.


Or if you prefer a tomato based chili my Chipotle Chili Recipe has a nice smokey flavor to it. I set out an assortment of toppings to make it a Chili Topping Bar dinner.

BEST Hasselback Cheesy Pizza Bread with Ranch Butter



TGIF and it's Friday Night Pizza Night.  Pizza on Friday night has been one of my family traditions since my kids were little. We would eat pizza in some form and sit down to watch a movie together.
This recipe for Hasselback Cheesy Pizza Bread came from our love of eating pizza and cheesy bread. My kids always love to dip their pizza in ranch too. And with those two loves, I created the best Friday night pizza in front of a movie food.
This is also a great food for parties or for when you need something good to eat in a few minutes. It sure beats a frozen pizza any day and it's quicker! It takes 10-12 minutes from start to finish.

Options:
This recipe could easily be adapted as a Hawaiian Pizza by replacing the pepperoni for pineapple and canadian bacon or a supreme pizza bread by adding green peppers, onions and sausage.

Party Idea:
Make an assortment of Hasselback Cheesy Pizza breads with different topping just like your favorite pizza toppings for an easy to eat party food.

Hasselback Cheesy Pizza Bread Recipe

  • 1 loaf of good french bread
  •  2 cups of shredded cheese
  • sliced pepperoni
  • 1/2 cup of butter
  • 1 tablespoon of ranch dressing powder mix
  • 1 jar of your favorite pasta red sauce
Preheat your oven to 425 degrees. Slice french bread stopping just before you slice all the way through about 1 inch apart then cut down the center of the bread lengthwise. Be careful not to cut all the way through the bread. 
Next, melt butter in microwave just until completely softened. Add just less than a tablespoon of ranch dip powder mix and stir. Brush ranch butter over the top of the french bread and in between each layer of the bread.
Next, stuff cheese in between each layer.  Finally add a couple of pieces of pepperoni to each section. Top of the loaf with a sprinkling of cheese and bake in the oven at 425 degrees for 6 minutes.
In medium sized bowl warm up the pasta sauce for dipping.
YUM! I promise this stuff is addicting. Everyone will LOVE IT!




Strawberry Smoothie




Since I am not much of a fan of breakfast I started making these smoothies because they are lighter than cereal, toast etc. They are packed full of yummy goodness like vitamins, minerals, raw food enzymes, pro-biotics, and flavonoids. You also get a serving of dairy and fruit in each one. I make my smoothies in a single serving blender but any blender will work. This recipe is for one serving so double or triple it for more.



1. Add about 1 cup of plain yogurt-I use Brown Cow Plain Cream Top.

2. Add frozen mixed berries & half a banana to equal about 1 cup.

3. Add 1 tsp vanilla & 1 tbs of pure Vermont maple syrup. I am lucky to have a sister who has supplied me with some of the best pure Vermont maple syrup around. If you don't have pure maple syrup organic cane sugar will work fine.

4. Blend in blender until smooth. Serve in your favorite glass. Yum!




Tips:
-Save your bananas that are getting too ripe by just putting them in the freezer with the peels on. When you want to make your smoothie run them under warm water to loosen peels. They are perfect for smoothies. I learned this great tip from Raw Melissa. Thanks Melissa!
-Any frozen fruits will make a great smoothie. Mix it up and create your own blend.
-Add a little cocoa powder for a chocolate variation.
-Yogurt is a great way to get the good bacteria back in your body after being on antibiotics when you have been sick.
-Strawberries add a great smoothness to smoothies because of the natural pectin

Brew one Starbucks® Classic Hot Cocoa K-Cup® pod (per directions on your machine), add maraschino cherry juice, mix. Top with marshmallows. a swirl of chocolate syrup and of course a cherry on top! It's so fun to create your own favorite version. This Cherry Hot Chocolate is one of my favorite flavor combinations. It reminds me of my favorite cherry chocolates I get at Christmastime.

Maple Sugar Walnut Blondies Recipe * Vermont Inspired Recipes




When we visited Vermont for Camp Gathering-Vermont this past April we visited just at the end of the maple sugaring season.  A lot of people think of fall in Vermont and they think maple syrup but the maple sugaring season is in the very early spring when the days are warming up but it's still below freezing at night. This is when the sap flows.
To the warm flavor of real Vermont syrup still evokes a feeling of fall. My Maple Sugar Blondies are made up of the warm fall flavors including walnuts and the caramel flavor of a blondie. I use Butternut Mountain Farm's real Vermont Maple Sugar AND pure Vermont Maple Syrup in this recipe too. If you can't find it in your local store you can order it online on their website- Butternut Mountain Farm
We visited Butternut Mountain Farm in Johnson, Vermont and I assure it is some of the purest finest maple syrup you will buy.

Maple Sugar Walnut Blondies

  • 1/2 cup of butter 
  • 1 1/2 cup pure maple sugar
  • 1/2 cup of grade A dark robust pure maple syrup
  • 3 eggs
  • 1 teaspoon real vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 2 cups unbleached flour
  • 1 cup white chocolate chips
  • 1/2 cup chopped walnuts 


Preheat oven to 350 degrees
Melt butter. Add eggs, maple sugar, maple syrup, vanilla, baking soda, salt and nuts.
Stir by hand, Then mix in flour. Pour into 9x13 inch greased cake pan. sprinkle white
chocolate chips on top. Bake for about 20-25 minutes until golden brown and pulling
away from the pan on the sides. Cut and serve. I like to sprinkle a little bit of maple sugar over top and drizzle with a little bit of pure Vermont maple syrup right before serving.

Sweet Tip: Only mix by hand and be sure stir only to incorporate the ingredients and no more for best texture and results.

Delicious Harvest Apple Pie * Bringing Vermont Home




Our destination for FALL this year is Vermont. Vermont is one of my very most favorite places on earth. Fall in Vermont means stunning colorful autumn leaves of the sugar maples, the smell of sweet wood burning in the fire places, harvest dances at the local town halls, harvest full moon walks, plaid flannel, men letting their beards grow out in anticipation of hard cold winters, crisp fresh apples, apple cider, apple cider doughnuts, and a delicious harvest apple pie. When I lived in Vermont it felt like I was living in a movie. Everything you do in the small towns of Vermont is special unlike any where else in the world. Schedule a trip to Vermont and spend at least a week exploring the winding Green Mountain roads, little villages (yes they are called villages in Vermont), visit the local general/grocery stores, take a hike or swim in one of the many swimming holes of the fresh rivers. If you are there in the fall don't miss having a sip of fresh apple cider and an apple cider doughnut. Yes, it really does look like the beginning of Newhart even now in 2015 thirty years later and it's just as enchanting as the song Henry Mancini wrote for the show. Go a head and listen. You will imagine yourself driving from small town to small town peeping at the rainbow of colors that cover the mountains this time of year.

I love this recipe for apple pie because it's a mix of both a pie crust and the taste of an apple crisp blended together in this delicious pie.  I use locally grown apples which always taste best and are freshest. I was blessed this year to have a wonderful heirloom apple tree that is a remnant of the apple orchards that use to cover the small town of Orem, Utah.

Did you know? Many of the variety of apples where lost during prohibition because they didn't want people to make hard apple cider so the trees where cut down. So sad but if you are lucky and in Vermont and find a wild apple tree along the side of the road go and forage for some of these tasty old varieties that have long since disappeared from all most everywhere. You never know it could be along one of the roads (Hazens Notch Road) President George Washington sent the troops up to Vermont to build during the revolutionary war.



Harvest Apple Pie Recipe
makes one pie

Pie filling:

  • 12 fresh apples
  • 1 cup of sugar
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ginger powder
  • pinch of sea salt
Peel and slice apples in about 1/2 inch slices. In a large mixing bowl add sugar and spices and mix. Toss apples in sugar spice mix. Set aside.


Pie Crumble Topping:
  • 1 cup of sugar
  • 1/2 cup of unbleached flour
  • 1/2 cup of fresh cream butter
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ginger powder
  • 1/2 teaspoon of sea salt
With a fork or your hands blend together ingredients until the mixture forms small pebbles. Set aside.

Add pie crust to 9 inch pie pan. Be sure to prick small holes in the bottom of the unbaked pie crust with fork. Add apple filling to the pan. Top with pie crumble topping. 
For the star fall decorative topping I tool a small cookie/pastry cutter added stars around the edge of the pie crust then made the star fall pattern starting at one side over lapping the stars then slowly spacing them further and further apart to get the star fall effect. This would also be pretty with a tiny maple left cookie/pastry cutter to make a wind blown leaf decoration.

Place pie pan on a parchment lined cookie sheet and bake at 350 degrees for 40 minutes. The pie will be bubbling hot so use caution when taking out of oven.

Sweet Tip: Let pie set up for a least 20 minutes before serving.





Marshmallow Cream Chocolate Milk Recipe * fairlife Milk * Food & Drink

Chocolate milk is one of my kids’ favorite things to have as a treat. They have loved it since they were tiny little nuggets. Even now as teens, it's one of the first things they go for when they are looking for something as a quick snack.
A pint of my homemade chocolate syrup is always on hand for a nice cold glass of chocolate milk. We love how rich an and creamy the fairlife ultra-filtered real whole milk makes our chocolate milk. Since it's such a favorite, I decided to take our favorite treat to the next level with some homemade marshmallow cream topped off with rich chocolate shavings.


Marshmallow Cream Chocolate Milk Recipe

  • 1 pint homemade chocolate syrup
  • 1 quart fairlife ultra-filtered whole milk
  • homemade marshmallow cream
  • chocolate shavings for garnish
To assemble: Add fairlife ultra-filtered milk, homemade chocolate syrup to taste, top off with fresh homemade marshmallow cream and the finest quality chocolate shavings. 
To make chocolate shavings simply take your favorite chocolate bar and grate it using a fine tooth grater.






Homemade Marshmallow Cream Recipe

  • 3 large egg whites
  • 1/2 teaspoon cream of tartar
  • 3/4 cup real corn syrup
  • 2/3 cup granulated sugar
  • 1 teaspoon the best pure vanilla extract
  • pinch of sea salt (about 1/4 teaspoon)
In a stand mixer add egg whites and cream of tartar. Whip until soft peaks form and set aside. In a heavy bottom saucepan add water, corn syrup, sugar and salt. Bring to a boil then turn town to medium heat. Stir, being careful not to scrape the sides of the pan. Cook until the sugar syrup reaches the soft ball stage. Remove from heat.

Note: You can test to see if the syrup is at the soft ball stage by pouring s small amount in syrup into a bowl of cold water. If the syrup forms a soft ball when pressed together with fingers it's ready.

Stir the syrup until the bubbles have settled. 

Turn the stand mixer on with the egg whites in it and slowly add the sugar syrup. Whip until the mixture becomes smooth; about 5 minutes. Then add in vanilla extract. Your marshmallow fluff is now ready to serve. Enjoy!
