We've been in a snacking mood lately. Caramel corn and popcorn and flavored chips, we then thought about muddy buddy recipes and puppy chow recipes. Putting together this collection made for some big cravings. I see a movie night with puppy chow party in our near future that includes all these amazing puppy chow and muddy buddy recipes. Food & Drink * Summertime Ice Cream


Why wait for your birthday to enjoy ice cream or for the ice cream truck to drive by? We don't. I love ice cream. In fact it's one of my all time favorite desserts. Do you remember as a kid when the ice cream truck would come around just after dinner time in the summer evenings. We would beg our moms for some change and run out to grab your favorite icy treats. 


My comfort food is a chocolate and caramel Magnum pop. Do you have a favorite pop from childhood you still love? Are you a fruit or chocolate person?

French Artisan Bread Pizza on the Grill * Food & Drink




With temperatures rising to as high as 110 degrees in Arizona who wants to turn on the oven. After fun in the sun, swimming, hiking and playing with friends Pizza on the Grill is a go to recipe for an easy delicious and fresh dinner.

French Artisan Bread Pizza
  • sliced French artisan bread {I have mine sliced at the bakery}
  • your favorite red sauce
  • pizza blend of shredded cheese such as mozzarella and pecorino {or you can use any cheese you have on hand}
  • artichoke hearts
  • black olives
  • fresh basil {we picked some fresh from the garden}
  • cherry or plum tomatoes {fresh from the garden or farmers market is best}





Warm the grill on low about 350 degrees. Lay out bread slices on cook sheet to assemble. Layer sauce, cheese, artichokes, basil. Smash olives in hand and slice tomatoes then layer on top. Grill until cheese is melted.

Sweet Tip: Choose your favorite pizza toppings to make it your own.




Travel * Florida's Amelia Island Plantation * part one





After visiting the Amelia Island Plantation in Florida I decided that there is just way to much goodness about the resort to write it all up in one post. I will be featuring Amelia Island in a 3 part feature starting with my favorites for a relaxing vacation getaway that I find perfect. Just look at that lovely row of beach cabanas above. When I think of a great relaxing getaway there are 3 big things that come to mind Cabana on the Beach, Spa treatments and good food. Omni Hotels and Resorts know how to do all three very well and with Amelia Island they kept their ever good reputation and well exceeded it.

Already a historical favorite resort, the Omni Hotels & Resorts spent $85 million to Re-Imagination the legendary Omni Amelia Island Plantation Resort into the 404 rooms on 1,350 acres of private luxury resort to the stunning resort it is today. Yes, 1350 acres. Now you know why I need at least 3 parts of this feature.
With a huge new pool multi tiered pool including an adults only infinity edge pool, a 10,000 square foot family friendly pool and 3.5 miles of immaculate beach sun and water are abundant.
For me the poolside and beach side service while sipping a cool drink and reading my favorite magazine is ideal.



I also love that there is an adults only pool. I'm more of a pool lounger-floater-wader than a swimmer and the idea of relaxing with out kids splashing around sounds lovely.
One mark of a truly luxurious hotel resort is in the details. See the quality furniture and beautiful landscape, it's in the details.



A great resort always has a great spa. At the full service Spa and Salon is just "footsteps from the Sea." Taking a green and organic approach free from harmful chemicals, artificial ingredients and preservatives.
I have sensitive skin and I'm allergic to petrochemicals which aren't good for your body anyway so I LOVE this about the Amelia Island Spa.
How does a Seaside Sensory Journey that includes a cool down treatment using natural silk proteins and plum wine sugar acids or a Plantation Blossom Ritual that includes a warmed exfoliate of lemon, papaya, cherry blossom, and rice powder cream sound? You will be polished, buffed, masked, and massaged to a state of relaxation and calm.

Raspberry Banana Yogurt Pops * Food & Drink



Raspberries always remind me of summertime. My grandma Bohman always had raspberries in her back yard. Her neighbor down the road had a pick-your-own raspberry patch. I use to go down and eat as many raspberries as I picked. Grandma always had fresh homemade raspberry jam made from those delicious raspberries.
Delicious healthy and naturally sugar free our easy to make Raspberry Banana Yogurt Pops are the perfect snack on a hot summer's day. Bananas are the natural sweetener so there is no need to add sugar. You can even eat them for a healthy breakfast on the go. Kids will love them. I love them. Having a party and want to serve a refreshing treat? These yogurt popsicles would be so lovely lined up on the table. Enjoy!

Raspberry Banana Yogurt Pop Recipe
Makes 4 pops

  • 1 sliced ripe banana (the riper the sweeter)
  • 1 cup of frozen raspberries
  • 1/2 cup of whole milk plain Greek yogurt
Layering the yogurt then bananas then raspberries blend using the plus feature on your food processor allowing small chunks to remain in the mixture. Pour into popcicle molds. Freeze for at least 2 hours. 
To remove for mold run the mold under hot water to loosen. If still tight run under hot water a little longer. Serve right away or store in an airtight container in the freezer.

Thai Chicken Curry Recipe * Food & Drink




We love to eat out at our local Thai restaurant. My sister's friend's parents own it. They are from Thailand and have some of the most amazing recipes. Thai food always seemed too exotic and foreign and like most Americans we never thought about trying to make it at home. After looking into Thai cuisine and Thai curries we found out that not only is it easy to make most grocery stores carry the ingredients for this favorite of comfort foods that has a lovely complex flavor palate. Look in the Asian foods section or better go to an Asian foods market if you have one near by for the ingredients. We used fresh basil from our herb garden which is now plentiful and also super easy to grow.

Sweet Tip: The more you clip your basil to use the more it will flourish.



Thai Chicken Curry Recipe
  • 1 pound fresh boneless chicken breasts or thighs
  • 1  pound Yukon gold potatoes 
  • 1- 15 ounce can of unsweetened coconut milk
  • 1 cup water
  • 1- 4 ounce jar of red curry paste
  • 2 lime leaves (or zest of 2 limes if lime leaves not available)
  • juice of 2 limes
  • 1 tablespoon brown sugar
  • 2 teaspoons of sea salt
  • 2 large sweet red peppers
  • 1 tablespoon fish sauce
  • 4 cloves of garlic
  • 1 medium yellow onion
  • bunch of fresh cilantro
  • bunch of fresh basil
  • cold pressed coconut oil
Prep:
Chop onions, garlic, cilantro, and basil. Set aside. Chop potatoes red peppers and chicken into bite size pieces. Set aside. 
In a large heavy bottom pot add 2 tablespoons of coconut oil. Melt over medium heat. Add curry paste and stir for about 20 seconds. Add water, coconut milk, lime leaves (or zest) brown sugar, onion, garlic, sea salt and combine. Bring to a simmer. Add chicken and potatoes. Allow to cook until chicken to cooked through about 10 minutes. Add in cilantro, basil, fish sauce and lime juice. Mix in. Allow to simmer for 2-5 minutes to blend flavors.

Serve over rice with fresh basil and lime wedge on top.

 I don't know anyone who doesn't love a good grilled cheese sandwich. It's a great go to comfort food. We looked around on Pinterest and found a few for you to try. Lunch will never be the same with one of these delicious grilled cheese recipes.
