Asian Orange Chicken Recipe
serves 4
- 2 tablespoons of chopped fresh ginger root
- 3 cloves of garlic
- 1 bunch of green onions
- 1 teaspoon crushed red pepper
- 1/4 cup of soy sauce
- 1/4 cup of rice vinegar
- 1/4 cup of sugar
- 1/4 cup water
- Zest of 1 orange
- Juice from half a large orange
- 1 tablespoon of cornstarch (for sauce)
- 2 pounds chicken breast
- 2 large eggs
- 1/2 cup sesame seed oil
- 1 cup of cornstarch (for coating chicken)
- 1 teaspoon sea salt
- 1/2 teaspoon ground white pepper
Prepare
Sauce- In a small glass bowl mix together soy sauce, rice vinegar, sugar, water, orange juice, orange zest and 1 tablespoon of cornstarch. Set aside.
Seasonings- Peel and mince ginger. Peel, crush and chop garlic. Chop green onions. Set aside.
Chicken- In a medium bowl add 1 cup of cornstarch, salt and pepper then mix together. In a small bowl whisk eggs. Chop chicken into bite size pieces. In large wok pour 1/2 cup of sesame seed oil. Heat on medium high flame. When oil is ready dip chicken pieces into the egg mixture then coat with cornstarch mixture. Place one piece at a time in the hot oil. (test with a small drop of egg. the egg will sizzle.) Cook until golden brown (2-3 minutes) then turn using tongs. Cook the other side until golden brown. Once cooked set aside.
Bring it all together- Allow wok to cool down then clean by wiping out the wok. Add 1/4 cup of sesame seed oil to the bottom of the wok. Heat on medium high flame for about 30 seconds. Add seasonings: ginger, garlic, green onions and crushed red pepper. Saute for 1 minute. Add sauce to the wok. Bring to a boil. Boil of 2 minutes. Turn off heat and then place chicken into the wok. Toss the chicken using tongs and coat the chicken in sauce. Serve with jasmine rice and a suggested side of stir-fried broccoli.
